Turkey Leftovers-Day 2

The last couple ideas were pretty simple ones, so I upped my game just a tad bit. Last night when I got home from work right before 11:30 I put together a scone dough with turkey meat flecked throughout and put it into the fridge to stay cold until morning. If you have never made scones, it’s really important to make sure the dough is cold when you put it into the oven…just a friendly tip. Before I hit the sheets I also made a jam to go with my savory scones…Peppered Pear Zinfandel Jam…oh my. This morning when I woke up I just popped those bad boys in the oven, took them out, placed a smear of Gorgonzola on top, and served it with the jam. Heaven.

I want to make sure I put up at least two recipes a day. After tomorrow when you are wondering what to do with the plethora of leftovers I want you to have some options. The second thing I made was in response to my Uncle Nick commenting on my turkey experimentation. He owns a Crepe Truck and asked if I have any suggestions for a turkey crepe. Oh you know I did. The idea I came up with off the top of my head sounded so tasty I had to try it out. It was a crepe overstuffed with turkey(of course) sauteed up with fennel and shallots, and finished off with some of that delightful gorgonzola.  Crepes are so versatile…if you don’t like fennel, or gorgonzola for that matter (shame on you) no need to fear…sautee up any  veg you like and melt some cheese into it. Voila! Brunch.
