The First of Many

Tonight at the cooking school we had quite the task…show a room-full of hungry adults how to make 12 Thanksgiving Dishes in 2 hours. This is our first Thanksgiving themed class, but many are to follow.

We plowed on through the extensive menu from curry dip with crudite to salted caramel apple pie ice cream. The photo above is of a pumpkin cream soup cooked inside of the pumpkin, you basically layer croutons, cannellini beans, and the cheese of your choice inside and cover with cream before baking for one and a half to two hours.

It got me thinking about throwing a small dinner party to celebrate fall, not necessarily a Thanksgiving dinner, but something a little bit different. In between prepping, serving, and cleaning I think I have designed a pretty comprehensive five course meal to be seen in the near future. Thank goodness I’m not planning on turkey or ham, by the time Thanksgiving gets here I am going to be all turkey-ed out!

Here is the actual menu we prepared tonight:

Crudites with Mama Liesenfelt’s Curry Dip

Pumpkin Soup in it’s own Bowl

Orange and ginger glazed Turkey

Cider Baked Ham

Chipotle Tortilla Cornbread Stuffing

Garlic and Lime Sweet Potato Salad

Horseradish Mashed Potato with Rutabagas

Curried Turkey with Cranberry Chutney

Sweet Potato and Dried Cranberry Pie

Salt Truffles

Homemade Marshmallows

Pie Ice Cream
